Once a familiar favorite at Mighty Squirrel Brewery, Ya Mother’s Truck ’N Kitchen is no stranger to the Waverley Oaks Park community. Their delicious lineup of comfort food with a twist includes smashburgers, chicken sandwiches, tacos, fries, and more.
Since launching in 2022, the award-winning food truck has built a loyal following for its bold flavors, generous portions, and energetic approach to everyday favorites.
Behind the truck is Chef Nick, whose passion for creating memorable meals is at the heart of every dish.

Q. What inspired you to open Ya Mother’s Truck ’N Kitchen?
I’ve worked in the food industry for more than 20 years, and after doing something for so long, you start to wonder: What if I had my own food business? The opportunity came during the COVID-19 shutdowns, when I was on unemployment and saw a food truck for sale that needed a lot of work. A little more than a year later, we were serving our first sandwich.
Q. How did the name “Ya Mother’s Truck ’N Kitchen” come about?
The name came about while I was goofing around with a friend and brainstorming absurd restaurant names. That’s when we came up with Ya Mother’s Kitchen. My original plan was to buy a small sub or pizza shop and use that name. When the food truck opportunity came along, it was just a matter of adding “Truck,” which made the name even more amusing and catchy.
Q. Are there any family recipes, personal influences, or favorite flavors behind your cooking?
A lot of my cooking and menu inspiration comes from my mother, who is Mexican, and my father, who was Italian and loved Chinese food. Growing up, I enjoyed quesadillas, tacos, lasagna, pasta dishes, crab rangoons, and classic American favorites like burgers and hot dogs. I try to bring that same sense of comfort food to the truck, while adding a twist that gives customers something familiar yet unexpected.
Q. Is there one menu item you always recommend to first-time customers?
Right now, I would recommend the General Gao’s Chicken Sandwich. I love combining sweet, spicy, sour, and savory flavors, and that sandwich really captures what we aim to accomplish with our menu.
Q. What do you enjoy most about operating a food truck?
The thing I enjoy most is the creativity. If something inspires me today, I can add it to the menu tomorrow. I also enjoy being outdoors and interacting with customers. There are so many places people can choose to eat, and I am always grateful when they choose us.
